Ingredients for the cake:
- 100 g ground almonds
- 50 g of hard bread mixed in a mini-mixer
- 100 g whole sugar or brown sugar
- Vanilla powder or vanilla sugar
- 4 eggs
- 100 g of intensely flavored olive oil
- 1/2 packet of yeast
- All the zest of an organic lemon
- All the zest of an organic orange
Ingredients for the syrup:
- Lemon juice
- Orange juice
- 15 g of sugar
Recipe :
1. Preheat the oven to 150°
2. Mix in a salad bowl:
- 100 g of almond powder,
- 50 g of mixed hard bread,
- 100 g of sugar,
- half sachet of yeast
- vanilla powder,
- orange zest
- lemon zest.
3. Gently beat the 4 eggs and the olive oil.
4. Combine the two mixtures.
5. Oil your cake mold.
6. Pour the batter into the mold.
7. Place in the oven for 40 minutes.
8. Meanwhile, heat the orange juice, lemon juice and 15 g of sugar for 3 minutes, stirring.
9. Remove the cake from the oven and wait five minutes before unmolding it.
10. Soak it with the syrup using a brush, on the top and on the sides.
THE LITTLE ADDITION: for a gluten-free formula, choose gluten-free bread! You can also serve it without the syrup, with tea or verbena for example.
