Ingredients (for approximately 15 cookies):
- 200g flour
- 100g soft butter
- 1 egg
- 100g of Tenche black olives
- 100g grated cheese (parmesan or gruyere type)
- 2 tablespoons of olive oil
- 1 teaspoon of baking powder
- Salt and pepper to taste
- Herbes de Provence or other aromatic herbs (optional)

Preheat your oven to 180°C

In a salad bowl, mix the flour and baking powder. Add the soft butter cut into small pieces. Mix with your fingertips until you obtain a sandy texture.

Add the olive oil and beaten egg, then mix until you obtain a smooth paste.

Add the chopped olives, grated cheese, salt, pepper and Provence herbs. Mix well to distribute the ingredients evenly throughout the dough.

Form small balls of dough and place them on a baking tray lined with parchment paper, spacing them slightly apart.

Lightly flatten each ball with the palm of your hand to form cookies.

Bake the cookies for about 12 to 15 minutes, or until lightly browned.

Once cooked, let them cool on a rack before eating them.
