What is a second extraction olive oil ?
A second hot extraction consists of recovering the residual oil contained in the olive pomace, that is to say the solid remains (skin, pulp and stone) after the first extraction of olive oil.
To do this, the olive paste is heated in order to extract the oil still present. This oil, called olive pomace oil, is then filtered before being consumed. Thanks to its good resistance to heat, this oil is ideal for cooking.
How to use it ?
This cooking olive oil is ideal for cooking all your foods: meat, fish, vegetables and other preparations. To enhance the flavors of your dishes, add a drizzle of our finishing olive oils as a final touch, thus revealing all their aromatic subtlety.
