For 4 people :
Ingredients :
- 1 kg of potatoes (variety suitable for mashing, such as floury potatoes)
- 4 cloves of garlic
- Extra virgin olive oil
- Salt and freshly ground black pepper, to taste
- Optional: chopped fresh parsley for garnish
- Garlic olive oil
Preparation :
1. Peel the potatoes and cut them into uniform sized pieces. Rinse them under cold water to remove excess starch.
2. Place the potatoes in a large saucepan and add enough cold water to cover them. Add a pinch of salt to the water.
3. Bring the water to a boil, then reduce the heat and simmer the potatoes for about 15 to 20 minutes, or until tender when pierced with a fork. Meanwhile, peel and finely slice the garlic cloves.
4. Once the potatoes are cooked, drain them carefully in a colander.
5. In the same pan, heat the olive oil over low heat. Add the minced garlic cloves and let them cook gently in the oil for a few minutes, stirring frequently, until they become lightly golden and fragrant. Make sure not to brown the garlic or it will become bitter.
6. Add the cooked potatoes to the pan with the olive oil and garlic. Mash the potatoes using a potato masher or potato masher until you obtain a smooth, homogeneous mash.
7. Season the mashed potatoes with salt and freshly ground black pepper, to taste. Stir well to incorporate the seasonings.
8. Transfer the garlic mashed potatoes to a warm serving dish. If desired, sprinkle with chopped fresh parsley for garnish.
9. Serve the homemade garlic mashed potatoes hot and add a drizzle of garlic olive oil to finalize the recipe.
