To celebrate the first day of opening of scallop fishing, we offer you a recipe for scallops & truffle oil.Ingredients for 4 persons) :
- 12 scallops
- 4 candied tomatoes
- Mesclun
- A few shavings of parmesan
- 1 organic lemon
- Flower of salt
- Smoked black Kampot pepper
- TRADITION olive oil
- TRUFFLE olive oil
Recipe :
1. Rinse the nuts under cold water; blot them with absorbent paper
2. Cut the candied tomatoes
3. Wash and drain your mixed greens
4. On high heat, heat your TRADITION oil and sear your scallops for 30 seconds on each side, basting regularly with the oil.
5. Arrange a bouquet of mixed greens on each plate
6. Place the 3 nuts. Garnish with parmesan shavings, pieces of candied tomatoes and a little lemon zest
7. Season with pepper, sprinkle with a few drops of lemon juice and TRUFFLE oil. Serve immediately
THE LITTLE ADDITION: use a very hot pan and sear your scallops for a maximum of 30 seconds (overcooking will make it rubbery and fibrous)
