What is the secret of this basil olive oil?
We have selected olives which give a slightly softer oil (Salonenque). The basil is harvested in July and August, it is then stripped of the leaves and frozen, so that it retains its aromas until the olive harvest in November and December. The frozen basil leaf loaves are fed into the crusher at the same time as the olives. This solid aspect of basil allows it to be pulverized upon entering the grinder.
The paste thus obtained is then kneaded then centrifuged and filtered in order to remove all traces of humidity.

The secret of the very strong scent of this basil oil lies essentially in the very large quantity of basil used: this oil contains 10% fresh basil.
